Porcupines (meatballs)



• 1 pound topside mince
• 1/2 cup uncooked rice
• 1 onion
• 1 egg
• Salt and pepper
• One tin tomato soup (e.g. Wattie’s condensed tomato soup), mixed with half a tin of water


• Mix mince, rice, onion, egg, salt and pepper together.
• Form into balls, about the size of golf balls.
• Place in casserole dish and cover with soup and water.
• Cook for 1 hour at 180°C/350°F.
• In the last five minutes of cooking, you may want to add a little bit of water mixed with cornflour to thicken the sauce.
