Christmas mince pies


Christmas mince pies are actually quite simple to make. It requires Christmas mincemeat and sweet shortcrust pastry (either store-bought or homemade).

• Grease a muffin tray.
• Roll the pastry out to about 3mm thick.
• Using a round cookie cutter, cut a circle of pastry which is about a cm wider than each of the muffin moulds, and gently press into the tin so they form a curved tart base.
• Spoon approx. a teaspoon of fruit mincemeat into the centre of each base.
• Using either a circle or a novelty xmas cookie cutter, cut a section of pastry that is just big enough to form a lid over the pies (it’s fine if it doesn’t quite cover it completely).
• Bake at 180°C / 350°F for 10-12 minutes (but check regularly so that they don’t overcook). They should be just starting to brown at the edges.
• Leave to cool in the tin for five minutes, then place on a cake rack to cool completely. Sift with icing sugar if desired.
