Inspired by Simon Gault’s recipe, this is a really easy yet effective coleslaw. It works well all ways – both cabbage types with carrot, one cabbage type with carrot, or both cabbages alone. The key to good coleslaw is to use good balsamic vinegar.
• Green cabbage, finely chopped
• Red cabbage, finely chopped
• Carrot, finely grated
• Dressing in the following ratio: ½ cup mayonnaise to 1 tablespoon balsamic vinegar.
