Short Sweet Pastry

This recipe is taken straight out of Edmonds Classics and makes about 200g of pastry. Make sure you factor in the resting time when planning to make this.


• 1 cup flour
• 75g butter
• 1/4 cup sugar
• 1 egg yolk
• 1 tablespoon water


• Sift flour and cut in butter until it resembles fine breadcrumbs.
• Stir in sugar.
• Add egg yolk and water.
• Mix to a stiff dough.
• Chill for 30 minutes before using.
• Use as required for sweet pies and tarts.
